What's Mr Jones Cooking? (Mexican Grill)

As promised - the first edition of What's Mr Jones Cooking?

Tonight's dinner was Parrilla Mexicana (a.k.a. Mexican Grill). It is, by far, one of my favorite dinners and I do a little happy dance whenever Mr says he's going to make it. :)

You will need:
Cast iron skillet
Meat - we use chicken, steak, shrimp, and chorizo (Mexican sausage)
Onions & Green Peppers - optional, but they definitely add a lot of flavor!
1 packet of Fajita Seasoning
Cumin
Chili Powder
Salt
2 TBSP of vegetable oil
Any toppings you want!
Tortilla shells

Prep Work!

Season onions & green pepper with salt, cumin, and chili powder - saute in vegetable oil until soft/caramelized - put aside in separate bowl (use salad tongs to remove from skillet so the oil remains)

Season meat with fajita seasoning, cumin, and chili powder - cook in same skillet/oil as the veggies (lots of flavor!)

Mix in sauteed veggies - let the mixture simmer on medium-high heat

ENJOY!

It truly is as good, if not better, than any Mexican restaurant we've been to! If you have any questions, just let me know!

30 is the new 20...right?!?

As I write this, right this second (6:33pm EST), I am officially 30. Wow. Another decade done and over with...the beginning of a new "era".

I'm still not sure how I feel about this. But I'll be sure to let you know.

My husband, who is 10 months younger, told me, "I don't know how I feel about being married to someone in her 30's. I mean, I'm still in my 20's. That's like a 10 year difference!"

When I reminded him it was 10 months, he responded, "Years...months...however you want to justify it to make yourself feel better about the cradle robbing going on."

I heart him...most of the time. LOL!

The Best of Intentions

I meant to write a big post about my early birthday weekend away with the hubs...but life got away from me and it was never written.

I meant to write a big post about my last day in my 20's...but life got away from me and it was never written.

I meant to do a lot today...but they were never done. And now it's 11:00pm and I'm almost ready for bed.

I will write tomorrow. Promise.

The sun is out...and I'm back!

First of all, sorry (again!) that I went MIA. Last week was tough. I was sick for the first half...and anti-social for the second half. I wasn't much in the mood for blogging. I'm feeling much better now...and the sun it out!! That makes for a happy Wednesday!

A lot has happened since my last post...

Two of our friends got married on May 8th. The ceremony was beautiful and Mr Jones had a great time playing photographer! It made me miss our wedding...and all the planning that went along with it. I'm crazy; I know.

And Katie @ Loves of Life had her precious baby girl (whose name I freaking love)!! Many congratulations going out to Katie and her husband!!! I look forward to new Emeline pictures. :)

On a side note, I am thinking about starting a weekly post about the fabulously yummy food Mr Jones makes. I'd love to share the recipes with everyone. Good idea? Bad idea?

Celebrating Cinco de Mayo Puerto Vallarta style!

Those that know us, know that Mr Jones and I are "secret Mexicans"...basically, we LIVE for Mexican food. We could exist solely on Mexican food. Seriously.

(Side note: If I had my way, we never would've returned from our honeymoon in Mexico...we would've changed our names to Tatiana and Jesus and lived a happy little Mexican life. But I digress...)

There is a small, family owned authentic Mexican restaurant called Puerto Vallarta about 5 minutes from us. Needless to say, we frequent this restaurant a lot (I'm talking bi-weekly...if not weekly every so often). The owner, Pablo, knows us well and greets us with "¡Hola amigos! ¿Cómo estás?" every time we walk in. I have even had lengthy conversations with him in Spanish. (That was fun!)

Last night, we decided it was time to celebrate...Puerto Vallarta style! It was Cinco de Mayo after all. It would be practically a sin not to...right?

Mr Jones and his 32oz XX beer (he didn't believe me when I told him the sign said draft beers were 32oz!)

Mmmm...fajitas and a strawberry daquiri...what more can a girl ask for?

The aftermath...LOL!

All of the booths were handcarved and painted in Guadalajara, Mexico.
Each one is different and each one is just beautiful!

I hope everyone had a fantastic Cinco de Mayo!

Sorry the picture quality sucks...I had to use my cell phone.
